Easy curry recipe…

Served on rice. 

Chicken strips 

2 tins coconut cream 

3 tablespoons of natural peanut butter 

a small scoop of curry paste (I like the panang flavoured one) 

2 small cloves of fresh garlic 

juice of 1 lime 

generous sprinkling of turmeric 

veg of your choice – I like zucchini, capsicum, carrot, onion and mushroom 

1 can of chickpeas. 

Let this all simmer together until chicken and vegetables are cooked through. I often brown chicken slightly prior to cooking so then you only need to simmer for around 20 mins.
